We all know commercial microwaves are great for heating, zapping and defrosting – but what about prime cooking? For some recipes, the humble microwave is simply the best cooking method. Smooth, fresh béchamel sauce? Easy. Fantastic Panna Cotta? Piece of cake. Salmon and Spinach Roulade? A cinch.
Just about every commercial kitchen has one, but we don’t exploit their potential.
